Asian-Inspired Eggplant Bites with Sweet Soy Glaze

1.Prepare the eggplant by washing and cutting it into 1-inch cubes. Pat dry with a paper towel to remove excess moisture.

2.In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic to create the sweet soy glaze.

3.In another small bowl, mix cornstarch with water until fully dissolved to make a slurry.

4.Heat vegetable oil in a large non-stick skillet over medium-high heat until shimmering.

5.Add the eggplant cubes to the skillet in a single layer. Cook without stirring for 3-4 minutes until the bottoms are golden brown and caramelized.

6.Turn the eggplant cubes to brown on other sides, cooking for an additional 4-5 minutes until tender and evenly browned. Season lightly with salt and pepper during cooking.

7.Reduce heat to medium-low and pour the sweet soy glaze over the eggplant. Stir gently to coat all pieces evenly.

8.Slowly add the cornstarch slurry to the skillet while stirring to thicken the glaze. Cook for 1-2 minutes until the sauce is glossy and clings to the eggplant.
