Air Fryer Pepper Egg Cups

1.Preheat your air fryer to 180°C (350°F).

2.Prepare the pepper cups: Cut each bell pepper in half lengthwise through the stem. Remove the seeds and membranes. Brush the insides and cut edges of the pepper halves with olive oil, then season with salt and pepper.

3.Place the pepper halves cut-side up in the air fryer basket. If they seem unstable, you can trim a tiny bit off the rounded bottom to create a flat base, or use toothpicks to secure them if needed.

4.Air fry the pepper halves for about 8-10 minutes, or until they are slightly softened but still hold their shape.

5.While the peppers are pre-cooking, prepare the egg filling: In a medium bowl, whisk together the eggs, milk or water, melted butter, salt, and pepper until well combined. If using, stir in cooked rice or other optional additions.

6.Carefully remove the air fryer basket. Spoon the egg mixture into each pre-cooked pepper half, filling them about two-thirds full to allow for expansion.

7.Return the basket to the air fryer and cook at 180°C (350°F) for another 10-15 minutes, or until the eggs are set and cooked through. The exact time will depend on your air fryer and the size of the pepper cups.

8.Carefully remove the pepper egg cups from the air fryer. Let them cool slightly before serving.
