Classic Microwave Mini Quiche Lorraine

1.Grease a microwave-safe ramekin or a large mug with a small amount of butter or non-stick spray.

2.If using crushed crackers instead of a pre-baked shell, press them firmly into the bottom of the ramekin to form a base.

3.In a small bowl, whisk together the egg, milk, salt, pepper, and nutmeg until the mixture is smooth and slightly frothy.

4.Stir in the cooked bacon bits, shredded cheese, and chopped chives.

5.Pour the egg mixture into the prepared ramekin over the cracker base or into the tart shell.

6.Microwave on high for 60 to 90 seconds. Watch closely; the quiche is done when the center is set but still slightly moist to the touch.

7.Let the quiche stand for 1 minute to finish cooking with residual heat before serving warm.
