Country Scramble

1.Whisk together the eggs, heavy cream, salt and pepper in a large bowl.

2.Heat oil and add bell peppers and onion. Sauté 3 mins. Add the sausage to the pan and cook, stirring, until just heated through and evenly distributed in the pan, about 3 minutes.

3.Reduce the heat to medium low and add the egg mixture. Stir with a rubber spatula to create soft, creamy curds, about 3 minutes. When the eggs are mostly set, sprinkle the eggs with 1 cup cheese; top with chives.

4.Serve with roasted potatoes and tomato salad.
