Smooth Caramelized Banana Ice Cream with Date Purée Swirl

1.Peel the bananas and slice them into thin rounds.

2.In a large non-stick pan, heat 1/4 cup of granulated sugar over medium heat until it starts to melt and caramelize.

3.Add the banana slices to the pan and cook for 2-3 minutes on each side, until they are lightly caramelized.

7.While the ice cream is churning, make the date purée by blending the pitted dates, water, and lemon juice until smooth.

8.Once the ice cream reaches a soft-serve consistency, slowly drizzle in the date purée while the ice cream machine is still running.

9.Continue churning for an additional 2-3 minutes to create the swirl effect.

10.Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
