Roasted Lamb Chops with Herb Crust

1.Preheat the oven to 400°F (200°C).

2.In a medium bowl, mix together the bread crumbs, Parmesan cheese, parsley, rosemary, thyme, garlic powder, salt, and black pepper to make the herb crust.

3.Season the lamb chops with salt and black pepper. Press the herb crust onto both sides of each lamb chop.

4.In a large baking dish, toss together the baby potatoes, carrots, bell peppers, red onion, olive oil, oregano, garlic powder, salt, and black pepper.

5.Arrange the lamb chops on top of the vegetables in the baking dish.

6.Roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired doneness and the vegetables are tender.

7.Remove from the oven and let the lamb chops rest for a few minutes before serving.

8.Serve the roasted lamb chops with the roasted vegetables.
