Triple Chocolate Mousse Cake

Start by preparing the base of the cake

Melting the Dark Chocolate In a heatproof bowl, combine the dark chocolate and butter. Melt the mixture over a double boiler until smooth. Remove from heat and let it cool.

Mixing the Base Ingredients Add sugar and cocoa powder to the chocolate mixture. Stir well. Then, beat in the eggs one at a time until fully incorporated.

Baking the Base Pour the batter into a lined cake tin and bake at 180°C for 25-30 minutes until set. Let it cool completely.

Preparing the Milk Chocolate Mousse In a small bowl, soften the gelatin in water. Melt the milk chocolate in a microwave or over a double boiler. Whip the heavy cream until soft peaks form.

5.Fold the melted chocolate into the whipped cream. Heat the gelatin mixture slightly and then slowly mix it into the chocolate mousse.

6.Spread the milk chocolate mousse over the cooled cake base. Refrigerate to set for at least 2 hours.

Preparing the White Chocolate Mousse Repeat the process for the white chocolate mousse using the white chocolate. Gently layer the white chocolate mousse on top of the set milk chocolate layer. Refrigerate again for another 2 hours.

8.Decorate the cake with assorted chocolate shavings or curls before serving.
