Figgy Butter Plum Pie

Prepare the Crust In a large mixing bowl, combine the flour and cold cubed butter. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Gradually add the ice water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling In a separate bowl, combine the sliced figs, plums, brown sugar, granulated sugar, cornstarch, cinnamon, vanilla extract, and lemon juice. Toss gently to coat the fruit evenly with the sugar mixture.

Assemble the Pie Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a circle to fit a 9-inch pie dish. Brush the crust with milk and sprinkle with sugar.
