Christmas Sapin Sapin

1.In a large bowl, combine glutinous rice flour, rice flour, coconut milk, water, and sugar. Mix well until smooth and free of lumps.

2.Divide the mixture into three equal parts. In one part, add ube flavoring and purple food coloring. In another part, add pandan flavoring and green food coloring. Leave the third part plain.

3.Prepare a steamer and line it with banana leaves or parchment paper.

4.Pour a layer of the ube mixture into the steamer and steam for 15 minutes or until set.

5.Repeat the process with the pandan mixture and then the plain mixture, steaming each layer for 15 minutes.

6.Once all layers are cooked, gently press the layers together to form a cohesive block.

7.Allow the sapin sapin to cool before cutting into squares or diamond shapes.

8.Serve the Christmas Sapin Sapin at room temperature or chilled, and enjoy the festive flavors of this traditional Filipino dessert!
