Christmas Sugo

1.In a large saucepan, heat olive oil and butter over medium heat.

2.Add minced garlic, chopped onion, diced carrot, and chopped celery. Cook until vegetables are softened, about 5-7 minutes.

3.Pour in the red wine and simmer until it reduces by half, about 5 minutes.

4.Stir in crushed tomatoes, beef broth, dried oregano, dried basil, nutmeg, cinnamon, smoked paprika, red pepper flakes, bay leaf, and tomato paste.

5.Season with salt and pepper. Bring the sauce to a simmer, then reduce heat to low and let it cook for about 1 hour, stirring occasionally.

6.Remove the bay leaf before serving.

7.Garnish with fresh parsley and serve over your favorite pasta, topped with grated Parmesan cheese.
