Yippee Noodles with Spicy Peanut Sauce

1.Boil water in a large pot and cook the Yippee noodles according to package instructions until al dente. Drain and set aside.

2.In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and the onion is translucent, about 2-3 minutes.

3.Add the sliced bell pepper and julienned carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

4.Add the bean sprouts and chopped green onions to the skillet, stirring to combine. Cook for an additional 2 minutes.

5.In a small bowl, whisk together the soy sauce, lime juice, peanut butter, honey, sriracha sauce, and water until smooth to create the spicy peanut sauce.

6.Add the cooked Yippee noodles to the skillet with the vegetables. Pour the spicy peanut sauce over the noodles and toss everything together until well coated and heated through, about 2-3 minutes.

7.Sprinkle sesame seeds on top before serving. Serve hot and enjoy your Yippee Noodles!
