Tropical Pineapple Pudding Delight

1.In a medium saucepan, combine the diced pineapple, milk, sugar, cornstarch, and salt. Stir well to combine all the ingredients.

2.Place the saucepan over medium heat and cook the mixture, stirring constantly, until it begins to thicken and bubble, about 5-7 minutes.

3.Once thickened, remove the saucepan from heat and stir in the vanilla extract and butter until fully melted and incorporated.

4.Pour the pudding mixture into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

5.Refrigerate the pudding for at least 2 hours or until fully chilled and set.

6.Before serving, top each pudding with a dollop of whipped cream and garnish with fresh pineapple slices.
