Heavenly Chocolate Lava Cake

1.Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust with cocoa powder to prevent sticking.

2.In a microwave-safe bowl, combine the chopped dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

3.Add the powdered sugar to the melted chocolate mixture and stir until well combined.

4.In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract until frothy. Gradually add this mixture to the chocolate mixture, stirring continuously.

5.Sift in the all-purpose flour and salt, and gently fold until just combined. Be careful not to overmix.

6.If using, fold in the chocolate chips for an extra gooey center.

7.Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

8.Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

9.Remove from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes, then invert each ramekin onto a plate.

10.Serve immediately, optionally with a scoop of vanilla ice cream or a dusting of powdered sugar.
