Decadent Chocolate-Covered Fries

1.Preheat your oven to 425°F (220°C).

2.Wash and peel the russet potatoes, then cut them into thin fry shapes, about 1/4 inch thick.

3.Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

5.Spread the fries in a single layer on a baking sheet lined with parchment paper. Drizzle with oil and sprinkle with sea salt, tossing to coat evenly.

9.Dip each fry into the melted chocolate, allowing any excess to drip off, then place them back on the parchment paper.

10.While the chocolate is still wet, sprinkle the fries with powdered sugar, crushed nuts, or sprinkles if desired.

11.Let the chocolate-covered fries sit at room temperature for about 10-15 minutes to allow the chocolate to set, or place them in the refrigerator for quicker setting.
