Carnival Style Rainbow Lollipops

1.Prepare a baking sheet by lining it with parchment paper and lightly spraying it with non-stick cooking spray. Set aside.

2.In a medium saucepan, combine the granulated sugar, light corn syrup, water, and cream of tartar. Stir the mixture over medium heat until the sugar dissolves completely.

3.Once the sugar is dissolved, stop stirring and allow the mixture to come to a boil. Use a candy thermometer to monitor the temperature. Continue boiling until the mixture reaches 300°F (hard crack stage).

4.Remove the saucepan from the heat and quickly stir in the clear vanilla extract.

5.Divide the hot sugar mixture into six small bowls. Add a few drops of different food coloring to each bowl to create red, orange, yellow, green, blue, and purple colors. Stir each bowl until the color is evenly distributed.

6.Working quickly, use a spoon to pour small circles of each colored sugar mixture onto the prepared baking sheet, creating a rainbow pattern. Place a lollipop stick into each circle, ensuring it is well embedded in the candy.

7.Allow the lollipops to cool and harden completely at room temperature, about 30 minutes.

8.Once the lollipops are set, carefully peel them off the parchment paper and enjoy your homemade carnival style rainbow lollipops.
