Spiced Carrot Cake with Walnuts and Raisins

1.Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2.In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

3.In another bowl, mix the vegetable oil, eggs, and vanilla extract until smooth.

4.Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

5.Fold in the grated carrots, chopped walnuts, raisins, and crushed pineapple until evenly distributed throughout the batter.

6.Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

7.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
