Spicy Cajun Beer Chili Extravaganza

1.In a large pot or Dutch oven, heat a tablespoon of oil over medium heat.

2.Add the sliced Cajun sausage and cook until browned, about 5 minutes. Remove and set aside.

3.In the same pot, add the chopped onion, garlic, celery, and jalapeño. Sauté until the vegetables are softened, about 5-7 minutes.

4.Add the chicken thighs to the pot and cook until they are browned on all sides, about 5 minutes.

5.Stir in the Cajun seasoning, smoked paprika, and cumin, mixing well to coat the chicken and vegetables.

6.Pour in the orange juice and beer, scraping the bottom of the pot to deglaze and incorporate any browned bits.

7.Add the diced tomatoes and kidney beans, stirring to combine all ingredients.

8.Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 30-40 minutes, or until the chicken is cooked through and tender.

9.Remove the chicken thighs from the pot and shred them using two forks. Return the shredded chicken to the pot and stir well.
