Creamy Tomato Basil Bliss Soup

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2.Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

3.Add the diced tomatoes (with their juices), vegetable broth, sugar, dried oregano, and red pepper flakes to the pot. Bring the mixture to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld.

4.Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a blender, but be cautious with the hot liquid.

5.Once blended, return the soup to the pot and stir in the heavy cream. Heat the soup over low heat until warmed through, about 5 minutes.

6.Add the chopped fresh basil and season with salt and pepper to taste. Stir well to combine.

7.Serve hot, garnished with additional basil leaves if desired.
