Chorizo & Egg Hot Dog Delight

1.In a skillet over medium heat, add the diced chorizo and cook until it starts to brown and release its oils, about 5-7 minutes. Stir occasionally to ensure even cooking.

2.While the chorizo is cooking, crack the eggs into a bowl, add the milk, and whisk until well combined. Season with salt and pepper to taste.

3.Once the chorizo is cooked, reduce the heat to low and push it to one side of the skillet. Add a small amount of butter to the empty side and pour in the egg mixture.

4.Allow the eggs to cook undisturbed for about 1 minute, then gently stir with a spatula, folding the eggs over the chorizo. Cook until the eggs are fluffy and just set, about 2-3 minutes. Stir in the shredded cheddar cheese and chopped chives, mixing until the cheese is melted and everything is well combined.

5.While the eggs are cooking, grill or boil the hot dogs according to your preference until heated through.

6.To assemble, place a hot dog in each bun, top generously with the chorizo and egg mixture, and sprinkle with additional chives if desired. Serve immediately.
