Garlic Herb Mashed Potatoes with a Festive Twist

1.Preheat your oven to 400°F (200°C).

2.Cut the top off the head of garlic, drizzle with a little olive oil, wrap it in aluminum foil, and roast in the oven for about 30-35 minutes until soft and caramelized.

3.While the garlic is roasting, place the peeled and cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat.

4.Once boiling, reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender.

5.Drain the potatoes and return them to the pot. Allow them to steam for a minute to remove excess moisture.

6.Add the roasted garlic (squeezed out of its skin), heavy cream, and butter to the potatoes. Mash everything together until smooth and creamy.

7.Stir in the chopped parsley, chives, and thyme. Season with salt and black pepper to taste, mixing well to combine all the flavors.

8.Serve the garlic herb mashed potatoes warm, garnished with additional herbs if desired.
