Creamy Cajun Shrimp Penne Bake

1.Preheat your oven to 375°F (190°C).

2.Cook the penne pasta according to package instructions until al dente. Drain and set aside.

3.In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

4.Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until softened.

5.Sprinkle the Cajun seasoning, smoked paprika, and cayenne pepper over the shrimp, tossing to coat evenly.

6.Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat.

7.In a separate bowl, combine the heavy cream and chicken broth, mixing well. Pour this mixture into the skillet with the shrimp and vegetables, stirring to combine.

8.Add the cooked penne pasta to the skillet, mixing everything together until the pasta is well coated with the creamy sauce. Season with salt and black pepper to taste.

9.Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.

10.Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

11.Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
