Crispy Cornflour Chicken Fry

1.In a large mixing bowl, combine the cornflour, all-purpose flour, garlic powder, onion powder, paprika, black pepper, salt, and baking powder. Mix well to create the dry coating mixture.

2.In a separate bowl, beat the eggs until well mixed.

3.Dip each piece of chicken into the egg mixture, ensuring it is fully coated.

4.After coating the chicken in the egg, transfer it to the dry coating mixture. Press the chicken into the flour mixture to ensure an even and thick coating.

5.Place the coated chicken pieces on a tray and let them rest for about 15 minutes. This helps the coating adhere better during frying.

6.In a deep frying pan or pot, heat oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small piece of the coating into it; if it sizzles and rises, the oil is ready.

7.Carefully add the chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 6-8 minutes on each side or until golden brown and cooked through.

8.Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.

9.Serve hot with your favorite dipping sauce or side dish.
