Decadent Chocolate Chip Pancakes

1.In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

2.In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix until fully combined.

3.Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

4.Fold in the chocolate chips until evenly distributed throughout the batter.

5.Heat a non-stick skillet or griddle over medium heat and add a little vegetable oil to coat the surface.

6.Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

7.Flip the pancakes and cook for an additional 1-2 minutes on the other side until golden brown and cooked through.

8.Repeat with the remaining batter, adding more oil to the skillet as needed between batches.

9.Serve the pancakes warm with additional chocolate chips, syrup, or whipped cream if desired.
