Creamy Bay Scallop and Spinach Orzo Bake

1.Preheat your oven to 375°F (190°C).

2.In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

3.In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 3-4 minutes. Add the bay scallops and cook for an additional 2-3 minutes until they are just opaque. Remove from heat.

4.In a large mixing bowl, combine the cooked orzo, sautéed spinach and scallops, heavy cream, garlic powder, onion powder, red pepper flakes, and half of the Parmesan cheese. Season with salt and pepper to taste. Stir until well combined.

5.Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the remaining Parmesan cheese and breadcrumbs evenly over the top.

6.Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

7.Remove from oven and let it cool for a few minutes before serving.
