Christmas Layered Sapin-Sapin

1.In a mixing bowl, combine 1 cup of glutinous rice flour, 1/2 cup of sugar, and 1/2 teaspoon of salt. Mix well to combine.

2.Divide the mixture into two equal parts (about 1 1/2 cups each).

3.For the green layer, in one part, add 1/2 cup of coconut milk, 1/2 cup of water, and 1/2 teaspoon of pandan extract. Mix until smooth and well combined.

4.For the purple layer, in the other part, add 1/2 cup of coconut milk, 1/2 cup of water, and 1/2 teaspoon of ube extract. Mix until smooth and well combined.

5.Prepare a 9-inch round cake pan by greasing it lightly with oil or cooking spray.

6.Pour the green layer mixture into the prepared pan and spread it evenly. Steam over boiling water for about 20 minutes, or until set. You can check for doneness by inserting a toothpick; it should come out clean.

7.Once the green layer is set, carefully pour the purple layer mixture on top of the green layer. Spread evenly and steam for another 20 minutes until set.

8.After the purple layer is set, remove the pan from the steamer and let it cool for about 10 minutes. Then, carefully invert the sapin-sapin onto a serving plate.

9.Garnish the top with grated coconut and sprinkle toasted sesame seeds for added texture and flavor.
