Barbecue Sausage Skillet with Red Onion & Cheese

1.Preheat a large cast-iron or heavy skillet over medium heat and add 1 tablespoon olive oil.

2.Add the bratwurst sausages to the skillet and cook, turning occasionally, until browned and cooked through, about 12-15 minutes. Remove sausages from skillet and set aside.

3.In the same skillet, add the remaining 1 tablespoon olive oil and butter. Once melted, add the thinly sliced red onions.

4.Cook the onions over medium-low heat, stirring occasionally, until they are deeply caramelized and soft, about 15-20 minutes. Season with a pinch of salt and pepper.

5.Slice the cooked bratwurst into bite-sized pieces and return them to the skillet with the caramelized onions.

6.Pour 1/2 cup barbecue sauce over the sausage and onions, stirring gently to coat everything evenly. Cook for 2-3 minutes to warm through and meld flavors.

7.Sprinkle the shredded cheddar cheese evenly over the sausage and onion mixture. Cover the skillet with a lid or foil and cook on low heat until the cheese melts, about 3-5 minutes.

8.Remove from heat and garnish with chopped fresh parsley or chives if desired.

9.Serve hot, with extra barbecue sauce on the side for dipping.
