Cheese and Garlic Flatbread Pizzas

1.In a large mixing bowl, combine the flour, instant dry yeast, sugar, and salt. Mix well.

2.Add the warm water and 2 tablespoons of olive oil to the dry ingredients. Stir until a rough dough forms.

3.Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

4.Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

5.Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up; otherwise, use a baking sheet.

6.Once the dough has risen, punch it down and divide it into 4 equal portions.

7.Roll each portion into a thin, round flatbread about 8 inches in diameter on a floured surface.

8.Place the rolled flatbreads on parchment-lined baking sheets or a pizza peel if using a stone.

9.In a small bowl, mix the minced garlic with 1 tablespoon of olive oil. Brush this garlic oil evenly over each flatbread.

10.Sprinkle the shredded Russian cheese blend evenly over each flatbread, followed by a light dusting of grated Parmesan cheese.

11.Sprinkle the dried oregano and freshly ground black pepper over the cheese.

12.Bake in the preheated oven for 8-10 minutes, or until the edges are golden and crispy and the cheese is melted and bubbly.

13.Remove from the oven and immediately sprinkle with fresh chopped parsley for a burst of color and freshness.

14.Allow the flatbreads to cool for a couple of minutes before slicing and serving.
