Alien-Inspired Sweet and Sour Rolls

1.In a large bowl, combine the flour, instant yeast, sugar, and salt. Pour in the warm milk and melted butter. Mix until a soft dough forms.

2.Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

3.Meanwhile, make the sweet and sour filling: In a bowl, mix cream cheese, Thai sweet chili sauce, sour cream, citric acid (or lemon juice), tomato paste, granulated sugar, stevia extract (if using), lemon zest, and salt. Stir until smooth and well combined. Chill until ready to use.

4.Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.

5.Punch down the risen dough and divide into 12 equal pieces. Roll each piece into a ball, then flatten into a small disc (about 8cm diameter).

6.Place a heaping tablespoon of the cream cheese filling in the center of each disc. Gather the edges and pinch to seal, forming a ball. Place seam-side down on the prepared tray.

7.Shape each roll to resemble an alien head: Gently elongate one side for a chin, and use your finger to make two small indentations for eyes.

8.Brush each roll with beaten egg. Press sliced black olives into the eye indentations and insert small pieces of chive or green onion at the top for antennae.

9.Bake for 18-20 minutes, or until golden brown. Cool slightly before serving.
