Spicy Jerk Shrimp and Corn Noodle Stir-Fry

1.Cook noodles according to package directions. Drain and set aside.

2.In a small bowl, whisk together the jerk sauce, soy sauce, honey (or brown sugar), and lime juice. Set aside.

3.Pat the shrimp dry with paper towels. Season lightly with salt and pepper.

4.Heat olive oil in a large skillet or wok over medium-high heat.

5.Add the shrimp and cook for 1-2 minutes per side, until pink and just cooked through. Remove shrimp from skillet and set aside.

6.Add the sliced bell peppers and corn kernels to the same skillet. Stir-fry for 3-4 minutes until the peppers are tender-crisp.

7.Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.

8.Return the cooked noodles and shrimp to the skillet with the vegetables.

9.Pour the prepared jerk sauce mixture over everything. Toss well to coat evenly, ensuring the noodles, shrimp, and vegetables are well combined with the sauce.

10.Cook for another 1-2 minutes, stirring constantly, until the sauce has thickened slightly and everything is heated through.

11.Serve immediately, garnished with fresh cilantro.
