Mexican-Spiced Grilled Seafood Tower

1.In a medium bowl, whisk together all the marinade ingredients: olive oil, lime juice, minced garlic, smoked paprika, cumin, oregano, cayenne pepper, salt, and black pepper.

2.Divide the marinade into three portions. Place the kingfish pieces in one portion, scallops in another, and prawns in the third. Gently toss to coat. Let marinate for at least 30 minutes, or up to 1 hour, in the refrigerator.

3.If your octopus is not pre-cooked, prepare it according to your preferred method (boiling or pressure cooking) until tender, then cut into bite-sized pieces. Toss the cooked octopus pieces with the remaining portion of the marinade.

4.Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

5.Grill the kingfish for 3-4 minutes per side, or until cooked through and slightly charred.

6.Grill the scallops for 2-3 minutes per side, until opaque and nicely seared.

7.Grill the prawns for 2-3 minutes per side, until pink and cooked through.

8.Grill the marinated octopus pieces for 2-3 minutes, just to warm them through and add a slight char.

9.Arrange the grilled kingfish, scallops, prawns, and octopus artfully on a large platter or tower stand.

10.Garnish generously with chopped fresh cilantro, diced red onion, and diced jalapeño.

11.Serve immediately with fresh lime wedges, avocado slices, and tortilla chips or tostadas on the side.
