Classic Caesar Salad with Homemade Dressing

1.In a medium bowl, whisk together the minced garlic, chopped anchovy fillets, egg yolk, lemon juice, and Dijon mustard until well combined.

2.Slowly drizzle in the extra virgin olive oil while continuously whisking to emulsify the dressing. Continue whisking until the dressing is thick and creamy.

3.Stir in the 1/4 cup of grated Parmesan cheese. Season with salt and freshly ground black pepper to taste. Set aside.

4.In a large bowl, combine the chopped romaine lettuce and the croutons.

5.Pour about half of the dressing over the lettuce and croutons. Toss gently to coat everything evenly.

6.Add more dressing as needed, tossing until the salad is coated to your preference.

7.Divide the salad among serving plates. Garnish with the shaved Parmesan cheese.

8.Serve immediately.
