Microwave Egg and Powdered Milk Mug Cake (Flourless)

1.Lightly grease the inside of a microwave-safe mug (approx. 10-12 oz capacity) with melted butter.

2.In a small bowl, whisk the eggs vigorously until they are light and slightly frothy, about 1 minute.

3.Add the granulated sugar, powdered milk, vanilla extract, melted butter, and salt to the whisked eggs.

4.Whisk the mixture thoroughly until all ingredients are fully incorporated and the batter is smooth, ensuring no lumps of powdered milk remain.

5.Pour the batter into the prepared mug, filling it no more than two-thirds full to allow for rising.

6.Microwave on high power for 60 to 90 seconds. Cooking time varies significantly based on microwave wattage; start checking at 60 seconds.

7.The cake is done when the top appears set and springs back lightly when touched, and the center is no longer liquid.

8.Carefully remove the mug from the microwave (it will be hot) and let the cake cool in the mug for 2 minutes before serving immediately.
