Spicy Peanut Soba Noodle

1.Cook the Soba Noodles: Bring a large pot of water to a rolling boil. Add the soba noodles and cook according to package directions (usually 4-6 minutes) until al dente. Do not overcook.

2.Rinse and Chill: Immediately drain the noodles in a colander and rinse thoroughly with cold water to stop the cooking process and remove excess starch. Drain well, then transfer the noodles to a large bowl and set aside in the refrigerator to chill while preparing the sauce.

3.Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, grated ginger, minced garlic, and Sriracha/chili garlic sauce until smooth.

4.Adjust Consistency: Gradually whisk in 2 to 4 tablespoons of hot water until the sauce reaches a smooth, pourable consistency that will easily coat the noodles.

5.Toss the Salad: Add the chilled soba noodles and any optional vegetables (carrots, peppers) to the bowl with the peanut sauce. Toss everything gently until the noodles are evenly coated with the sauce.

6.Serve and Garnish: Divide the noodle salad among serving bowls. Garnish generously with the sliced scallions and toasted sesame seeds. Serve immediately or keep chilled until ready to eat. This dish is best served cold or at room temperature.
