Savory Layered Labskaus Casserole

1.Place the cubed potatoes in a microwave-safe bowl with 3 tablespoons of water. Cover with a vented lid and microwave on high for 8-10 minutes until fork-tender.

2.While potatoes cook, melt butter in a skillet over medium heat and sauté the onions until translucent and soft, about 5 minutes.

3.Mash the steamed potatoes coarsely. Stir in the sautéed onions, diced corned beef, diced beets, beef broth, pickling liquid, and allspice.

4.Season the mixture generously with salt and pepper. Transfer the mixture into a microwave-safe glass baking dish, smoothing the top into an even layer.

5.Cover the dish and microwave on medium-high (70% power) for 5-7 minutes to allow the flavors to meld and the dish to heat through completely.

6.While the Labskaus heats, fry the eggs in a separate pan until the whites are set but the yolks remain runny.

7.Remove the dish from the microwave. Layer the fried eggs on top of the warm Labskaus and garnish with gherkin fans and rollmops before serving.
