Classic Spiced Carrot Cake

1.Preheat your oven to 175 degrees Celsius and grease two 9-inch round cake pans.

2.In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

3.Add the vegetable oil and eggs to the dry ingredients, mixing until well combined and smooth.

4.Fold in the grated carrots and chopped walnuts using a spatula until evenly distributed.

5.Divide the batter equally between the prepared pans and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

6.Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

7.While the cakes cool, beat the cream cheese and butter together in a bowl until creamy, then gradually add the powdered sugar and vanilla extract until the frosting is smooth and fluffy.

8.Once the cakes are entirely cool, frost the top of one layer, place the second layer on top, and cover the top and sides of the cake with the remaining frosting.
