Fresh Mayonaise

1.Have all the ingredients at room temperature

2.Put Egg Yolks in a bowl standing on a damp cloth

3.Add Salt and Mustard

4.Add a few drops of vinegar and beat thourghly before adding any oil

5.Add the oil a drop at a time beatig all the time

6.When the mayo thickens

7.Add 1/2 tsp vinegar and increase the flow of oil to a thin stream, beating all the time until all theoil has been added, the mixture should be thick and jelly like.
