Spinach and Feta Stuffed Mushrooms

Preparation Preheat the oven to 375°F (190°C).

Preparation Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet.

Filling Finely chop the mushroom stems and spinach. In a pan, heat a little olive oil and sauté the chopped mushroom stems, spinach, and minced garlic until the spinach is wilted. Remove from heat and let it cool slightly.

Filling In a bowl, crumble the feta cheese and mix it with the sautéed spinach mixture.

Assembly Drizzle the mushroom caps with a little olive oil and stuff them with the spinach and feta mixture.

Baking Bake in the preheated oven for 15-20 minutes, until the mushrooms are tender and the filling is golden brown.
