Pizza with Cheese Sauce, Fig, Arugula, and Viburnum Syrup

1.In a large mixing bowl, combine the flour, yeast, and salt. Gradually add the warm water and mix until a dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.

3.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

4.While the dough is rising, prepare the cheese sauce. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until it forms a paste.

5.Gradually whisk in the milk until smooth. Cook the sauce, stirring constantly, until thickened.

6.Remove the sauce from heat and stir in the grated cheese until melted and well combined. Season with salt and pepper to taste.

Preheat the Oven Preheat the oven to 475°F (245°C).

8.Once the dough has doubled in size, punch it down to release the air. Roll it out on a lightly floured surface to your desired thickness.

10.Arrange the sliced figs on top of the cheese sauce. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden brown.

11.Remove the pizza from the oven and let it cool slightly. Top with fresh arugula and drizzle with viburnum syrup.
