Spicy Cheese-Stuffed Potato Boats

1.Preheat the oven to 400°F (200°C). Wash the potatoes and prick them with a fork. Bake the potatoes for about 50-60 minutes until they are tender. Let them cool.

2.While the potatoes are baking, finely chop the onion, garlic, chilies, green chilies, and ginger.

3.In a skillet, heat some oil over medium heat. Add the chopped onion and sauté until translucent. Add the garlic, chilies, green chilies, ginger, and sugar. Cook until the mixture is fragrant.

4.Cut the cooled potatoes in half lengthwise. Scoop out the flesh, leaving a thin layer inside the skin to create potato boats.

5.Mix the scooped potato flesh with the cooked onion mixture. Squeeze in the lime juice and add grated cheese. Stir well to combine.

6.Fill each potato boat with the cheesy onion mixture, pressing it down lightly.

7.Sprinkle extra cheese on top of each potato boat.

8.Bake the stuffed potato boats for another 15-20 minutes until the cheese is melted and bubbly.

9.Serve the spicy cheese-stuffed potato boats hot, garnished with fresh herbs or a dollop of sour cream.
