Heavenly Basil Tomato Soup with Creamy Bliss

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2.Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

3.Add the diced tomatoes (with their juices), vegetable broth, sugar, and red pepper flakes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.

4.Add the fresh basil leaves to the pot and stir well. Simmer for another 5 minutes to allow the flavors to meld.

5.Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth.

6.Return the blended soup to the pot and stir in the heavy cream. Heat gently over low heat until warmed through, about 5 minutes. Do not boil.

7.Season with salt and pepper to taste before serving.
