Coca-Cola Creamy Cheesecake Delight

1.Preheat your oven to 325°F (160°C).

2.In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.

3.Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

4.In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

5.Gradually add the granulated sugar and continue to beat until well combined and fluffy.

6.Add the vanilla extract and mix until incorporated. Then, add the eggs one at a time, mixing well after each addition.

7.In a separate bowl, whisk together the Coca-Cola and cornstarch until smooth. Slowly add this mixture to the cream cheese batter, mixing until fully combined and smooth.

8.Pour the cheesecake batter over the cooled crust in the springform pan, smoothing the top with a spatula.

9.Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

10.Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

11.Before serving, whip the heavy cream and powdered sugar together until soft peaks form. Spread or pipe the whipped cream over the top of the cheesecake.

12.Drizzle the remaining 1/2 cup of Coca-Cola over the whipped cream topping for an extra burst of flavor. Slice and serve chilled.
