Zesty Sour Cream Lemon Loaf

1.Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

2.In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat with an electric mixer until smooth and creamy.

3.Add the sour cream, eggs, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Mix until well combined and smooth.

4.In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.

6.Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

7.Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
