Lemon Feta Cream Cheese Loaf

1.Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.

2.In a large mixing bowl, combine the softened cream cheese, sour cream, and crumbled feta cheese. Mix until smooth and creamy using a hand mixer or a whisk.

3.Add the granulated sugar to the cheese mixture and beat until well combined.

4.In a separate bowl, whisk together the eggs, fresh lemon juice, and lemon zest until frothy.

5.Gradually add the egg mixture to the cheese mixture, mixing until fully incorporated.

6.In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.

7.Slowly add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are okay.

8.Pour the batter into the prepared loaf pan and smooth the top with a spatula.

9.Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

10.Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
