Pasta with Crispy Onions and Green Apple-Pickle Sauce

1.Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.

2.In a skillet, heat the olive oil over medium heat. Add the thinly sliced onion and sauté until golden brown and crispy, about 8-10 minutes. Remove from heat and set aside.

3.In a small bowl, combine the diced green apples, chopped herring fillets, chopped pickled cucumbers, balsamic vinegar, honey, salt, and pepper. Mix well to combine all ingredients.

4.In a large mixing bowl, combine the cooked pasta with the green apple-pickle sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

5.Serve the pasta in bowls, topped with the crispy fried onions and dried onions for added texture. Garnish with chopped chives for a fresh finish.
