Hearty Vegetable Soup

1.Heat the olive oil in a large pot over medium heat.

2.Add the diced onion and sauté for about 5 minutes until translucent.

3.Stir in the sliced carrots and cook for another 3-4 minutes until they start to soften.

4.Add the broccoli florets and cook for an additional 2 minutes, stirring occasionally.

5.Pour in the vegetable broth and add the canned diced tomatoes with their juice.

6.Stir in the dried basil, dried oregano, salt, and pepper.

7.Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes until all the vegetables are tender.

8.Taste and adjust seasoning if necessary before serving.
