Orange Cream Pudding Parfaits

1.In a medium saucepan, whisk together the orange juice, sweetened condensed milk, eggs, granulated sugar, flour, vanilla extract, and salt until smooth.

2.Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and comes to a gentle boil, about 8-10 minutes.

3.Once thickened, remove the saucepan from heat and let it cool slightly before transferring the pudding to a bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming, and refrigerate until completely chilled, about 2 hours.

4.In a separate bowl, whip the heavy cream until soft peaks form. Gently fold half of the whipped cream into the chilled orange pudding until well combined.

5.In serving glasses or bowls, layer the orange pudding mixture and the remaining whipped cream alternately, starting with the pudding.

6.Sprinkle a little granulated sugar on top of each parfait layer for added sweetness and texture.

7.Garnish each parfait with a dollop of whipped cream, a sprinkle of orange zest, and an additional sprinkle of sugar if desired.
