Gourmet Toasted Chicken Mayo Sandwich

1.Preheat your grill or grill pan to medium-high heat.

2.Rub the chicken breasts with olive oil, salt, black pepper, and garlic powder.

3.Grill the chicken breasts for 6-7 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for 5 minutes before slicing thinly.

4.In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, parsley, and chives to create the herb mayo.

5.Butter one side of each slice of sourdough bread.

6.Spread a generous layer of the herb mayo on the unbuttered side of two slices of bread.

7.Layer the sliced grilled chicken evenly over the mayo, followed by the butter lettuce and tomato slices.

8.Top with the remaining slices of bread, buttered side facing out.

9.Heat a skillet over medium heat and toast the sandwiches for 3-4 minutes on each side, or until golden brown and crispy.

10.Slice the sandwiches in half and serve immediately.
