Microwave Mini Macaron Bites

1.In a medium bowl, sift together the powdered sugar and almond flour to remove any lumps. Set aside.

2.In a separate clean bowl, whisk the egg whites with an electric mixer on medium speed until frothy, about 1 minute.

3.Add the cream of tartar and continue whisking until soft peaks form, about 2-3 minutes.

4.Gradually add the granulated sugar, one tablespoon at a time, while whisking on high speed until stiff peaks form and the mixture is glossy, about 3-4 minutes.

5.Gently fold in the sifted almond flour and powdered sugar mixture into the meringue using a spatula, being careful not to deflate the mixture. Fold until the batter flows like lava and forms a ribbon when lifted.

6.If using, add food coloring to achieve the desired shade and fold gently until evenly colored.

7.Prepare a silicone mold for mini macarons by lightly greasing it with cooking spray or oil.

8.Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles into the mold, filling each cavity about halfway. Tap the mold gently on the counter to release any air bubbles.

9.Microwave the filled mold on high for 30 seconds. Check for doneness; the macarons should be set and slightly firm to the touch. If they are still soft, microwave in 10-second intervals until done, being careful not to overcook.

10.Once cooked, let the macarons cool in the mold for 5 minutes before gently removing them and placing them on a wire rack to cool completely.

11.For the filling, beat the butter in a bowl until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.

12.Once the macarons are completely cool, pair them up and pipe a small amount of filling onto the flat side of one macaron, then sandwich it with its pair. Repeat until all macarons are filled.
