Black Forest Cake Parfaits

1.In a medium saucepan over low heat, melt the dark chocolate, stirring until smooth. Remove from heat and let cool slightly.

2.In a large mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Fold in the melted chocolate gently until fully combined, creating a rich chocolate mousse.

3.In a separate bowl, combine the halved cherries and brandy. Let them macerate for at least 30 minutes to enhance their flavor.

4.To prepare the chocolate crumble, preheat the oven to 350°F (175°C). In a mixing bowl, combine the chocolate cookie crumbs, all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt. Stir in the melted butter until the mixture resembles wet sand.

5.Spread the crumble mixture onto a baking sheet lined with parchment paper and bake for 10-12 minutes, or until crisp. Allow to cool completely before breaking into small pieces.

6.To assemble the parfaits, layer the chocolate mousse, brandied cherries, and chocolate crumble in serving glasses. Start with a layer of mousse, followed by cherries, then crumble, and repeat until the glasses are filled, finishing with a layer of mousse on top.

7.Garnish each parfait with a few fresh mint leaves and a sprinkle of chocolate crumble. Serve immediately or chill until ready to serve.
