Classic Vanilla Sponge Cake

1.Preheat the oven to 350°F (175°C). Grease an 8-inch (20cm) round cake pan with butter and lightly dust with flour, tapping out the excess.

2.In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed until the mixture is pale, thick, and tripled in volume, about 5-7 minutes. This aeration is key to a light sponge.

3.In a separate bowl, sift together the all-purpose flour, baking powder, and salt to ensure even distribution and no lumps.

4.Gently fold the sifted dry ingredients into the egg mixture in three additions using a spatula. Use a light folding motion to avoid deflating the batter, mixing just until combined.

5.In a small bowl, combine the warmed milk, melted butter, and vanilla extract. Slowly drizzle this mixture into the batter, folding gently until fully incorporated and smooth.

6.Pour the batter evenly into the prepared cake pan, smoothing the top with a spatula.

7.Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
